Set the scene: A country retreat with all the facilities of a five-star spa hotel – plus a gold star in sustainability – THE PIG in Brockenhurst is part of a small but beautifully formed chain of four hotels (their fifth opens in 2016 in Devon). It’s walking distance from Brockenhurst station although I’d recommend a taxi if you have a heavy bag.

Soak up the atmosphere: This is the New Forest at its best. You stay in a sprawling Georgian manor but get to enjoy the best views, and foods, the region has to offer. It’s relaxing yet also rejuvenating from start to finish.

A bite to eat: All ingredients at THE PIG are sourced within a 25-mile radius of the hotel: but I would wager a majority come from the site itself. I loved my tour of the Kitchen Garden, Greenhouse, Smokehouse; in the distance are the meadows where foragers source edible flowers and fughi. They have chickens, sheep and pigs on site and offer foraging tours all year round that also include a trip to the coast for seaweed and shellfish. Chef James Golding and Head Chef Dan Gover oversee an enthusiastic team who are involved from planting to plate. Their passion is clear for everyone to see.

Brockenhurst-Int-Hi-Res-4Room with a view: The property has 26 rooms, some in the main property, some in converted stables with large monsoon showers and freestanding baths, luxurious larders, furniture with that country house feel opposite wide-screen TVs. There are also a selection of logs and cabins for those who want to get even closer to nature.

You’ll like this if… I can’t imagine why anyone wouldn’t like it. But it suited my personality perfectly – I grew up in the countryside but now live by the seaside and work in the city. It’s the perfect escapism.
